Why milk, cottage cheese and yogurt have different reactivity?

Although milk, cottage cheese, yogurt and other cheeses belong to the same family of products (dairy) protein antigenic structure changes when the milk changes into another product. According to this, some people allergic to milk tolerate yogurt and selected cheeses. The practical advice is to avoid the whole family of foods if you are allergic to two or more products from this family.
